Why Diet Soda?
Diet Soda lacks the sticky syrup sweetener of regular soda. This makes it slightly less dense, but also won't make you sticky if it happens to get you wet. For the record, however, the experiment does work with regular coke.

Is this a Chemical Reaction?
Nope! It's a physical change. The Carbon Dioxide bubbles come out of mixture due to the nucleation sites (little micro-bumps) on the Mentos.
